Method

Chocolate Chip Hotcakes
1. SIFT together the dry ingredients into a large bowl. In a separate bowl whisk together milk, eggs and vanilla until smooth. Pour into flour mixture and just whisk until combined.
2. HEAT a large non stick frypan over moderate heat then brush with a little butter. Spoon ¼ cup amounts of batter into the pan and sprinkle each with chocolate chips. Cook hotcakes for 1-2 minutes each side or until golden and puffed. Transfer to a baking tray and keep warm in oven. Cook remaining hotcakes to make 12, brushing pan with butter for each batch.
3. SERVE the hotcakes in stacks with a scoop of ice cream and fresh fruit with a drizzle of Glossy Chocolate Sauce.
Glossy Chocolate Sauce
1. COMBINE dark chocolate, butter, cream and honey in a saucepan and gently heat, stirring occasionally until smooth. Set aside to cool slightly before use.
These deliciously good hotcakes are perfect as a fun dessert the children can help to prepare. Serve with a good scoop of ice cream and a lashing of chocolate sauce.
