This delicious blondie is a lighter version of a brownie. The fruit and nuts make it a terrific lunch box or after school snack.
Method
1. WHISK together the butter, sugar, eggs and vanilla. Stir in the sifted flour, bicarbonate soda and cinnamon. Fold in the chocolate, dried fruits and walnuts.
2. SPOON the mixture into a greased and lined 28 × 18cm pan. Bake in a moderately slow oven 160°C for 50-60 minutes until just firm. Allow to cool completely in the pan before slicing. Store in an airtight container until required.
