What you need
200g butter, melted
1½ cups icing sugar, sifted
Finely grated rind and juice of 1 lime
6 egg whites, lightly whisked
1¼ cups ground almonds
½ cup flour
½ teaspoon baking powder
150g CADBURY Baking White Chocolate, finely chopped
Icing sugar, for dusting
1. CREAM together the butter, sugar, lime rind and juice until smooth and combined. Stir in the whites and then the almonds and sifted flour and baking powder. Fold through the chocolate. Spoon the mixture into 12 x 1/3 cup capacity paper lined friand pans.
2. BAKE in a moderate oven 180°C for 25 minutes or until cooked when tested. Cool on a wire rack for 5 minutes before turning out of pan to cool completely. Store in airtight container until required. Dust with icing sugar prior to serving.
