What you need
16 lamington fingers
4 ice cream slices, halved or 8 small scoops vanilla ice-cream
180g CADBURY Dairy Milk Peppermint, chopped
1/3 cup cream
CADBURY Dairy Milk Peppermint, extra, for decoration, if desired
1. PLACE half a slice of ice cream (or 1 scoop) onto a lamington finger. Then sandwich together with a second lamington. Repeat to make 8. Wrap each ice cream sandwich in a square of baking paper and freeze until required. Tie with string for fun, if desired.
2. GENTLY melt the chocolate and cream in a bowl over gently simmering water, stirring until smooth, to make the sauce. Allow to cool.
3. UNWRAP the lamington sandwiches into a bowl then drizzle with Chocolate Mint Sauce. Decorate with extra chocolate if desired.
