Clafoutis are an easy to make French pudding traditionally made with cherries. Chocolate and raspberries are a most delicious variation!
Method
1. SCATTER the raspberries over the base of a greased 24cm pie plate. Combine the chocolate, flour and sugar in a food processor and process until chocolate has been finely chopped. Add the milk, cream, eggs and vanilla and process until mixture is combined then pour over the raspberries.
2. BAKE in a moderately hot oven 190°C for 35 minutes or until set and lightly browned. Serve warm or at room temperature with cream or custard.
