A deliciously creamy chocolate ice cream swirled with cherries – or any berries of your liking, for that matter – perfect to squish between two of your favourite crunchy biscuits or wafers.
Method
1. COMBINE the condensed milk and chocolate in a saucepan. Stir over a low heat until the chocolate has melted. Transfer mixture to a bowl and chill in the freezer for 15 minutes.
2. BEAT the chocolate mixture and PHILLY using an electric mixer until smooth. Add the cream and beat until soft peaks form. Fold through the cherries then cover and freeze for 6 hours or overnight.
3. SANDWICH scoops of ice cream between palmiers to make an Ice Cream Sandwich. Serve immediately.
