1. USING scissors cut each marshmallow into 3. Pinch the edges together to form petals.
2. HEAT half the chocolate in a bowl over simmering water until just melted. Remove from the heat and stir in the remaining chocolate until smooth. Allow to cool and thicken a little.
3. SPREAD the flat side of 12 cookies with the melted chocolate and before the chocolate sets place 5 marshmallow petals onto each biscuit. Finish with a beanie in the centre of each to resemble a flower. Allow to set.
4. PLACE a scoop of ice cream onto the flat side of the remaining 12 cookies then sandwich together with decorated tops. Serve immediately.
NB: The decorated cookies can be prepared well in advance and stored in an airtight container.
