Spiced Apple Filo Bundles with Chocolate Brandy Sauce

Ingredients
FILO BUNDLES
400g can unsweetened apple
410g jar fruit mince
50g ground almonds
75g (3 rows) Cadbury® Dark Cooking Chocolate, grated
9 sheets filo pastry
50g butter, melted
Cinnamon sugar
Lengths of orange rind to decorate
CHOCOLATE BRANDY SAUCE
1/3 cup cream
125g (5 rows) Cadbury Dark Cooking Chocolate, chopped
1 tablespoon brandy
Method
- Preheat the oven to 200°C.
- Mix the apple, fruit mince, ground almonds and chocolate together.
- Cut each of the pastry sheets in half. Brush each piece with some melted butter and lightly dust with cinnamon sugar.
- Layer three pieces of pastry on top of one another. Pile some of the fruit mixture in the middle. Gather up the ends of the pastry to encase the filling. Brush the outside with the melted butter and place on a greased baking tray. Repeat to make six bundles.
- Loosely cover the tops of the bundles with aluminium foil. Bake for 20 minutes or until golden brown.
- Make the sauce while the filo bundles are in the oven. Bring the cream to the boil on the stove or in the microwave. Remove from the heat, add the chocolate and stir to melt. When the mixture is smooth, stir in the brandy. Keep warm.
- Tie pieces of orange rind around each filo bundle and serve with Chocolate Brandy Sauce.
Note: Filo bundles can be made several hours in advance. Cover with plastic cling wrap and keep refrigerated until required.
