Christmas Pudding Cassata

Ingredients
1 litre vanilla ice cream, softened
½ cup cream
1/3 cup chocolate liqueur
½ teaspoon mixed spice
2 teaspoons Cadbury® Bournville® Cocoa
2 teaspoons hot water
¼ cup chopped glacé cherries
½ cup mixed dried fruits
2 tablespoons flaked almonds, toasted
Method
- Beat the ice cream until smooth.
- Add the cream, liqueur and mixed spice. Beat well.
- Divide the mixture in half. Dissolve the cocoa in the hot water and add to one half. Add the cherries, fruit and nuts to the other half.
- Pour the chocolate mixture into a pudding basin and allow to just begin to freeze.
- When it starts to thicken, spread the mixture around the sides and base of the basin to form a hollow in the centre.
- Pour the fruit mixture into the centre of the hollow. Spread the chocolate over to level the surface and freeze.
- Cut into slices and serve with warm chocolate sauce.
